I have CSV files with extension .log. Can the Salamander viewer open these without renaming them to .csv?

Sure. Just configure the extension and its viewer in Options -> Configuration -> Viewers and Editors -> Viewers.

By default, *.* is associatd with the internal viewer, so with a default configuration, your .log file will show in the internal viewer.
If you meant to ask, how to view the .log file in the database viewer, which is the default for .csv files, procede as mdruiter suggested.
You may not want to generally associate .log extension with the database viewer, though. In that case use Alt+F3 (Files -> Alternate View from the menu) instead and choose your desired viewer for that instance.
