I would like to find out how to search for all files that are not named *.cmn and not *.pmm.

Simple method:
Open Find window and search for |*.cmn;*pmm

Another method:
1. Open Find window, search for *.* and press Find Now
2. (in the same window) find *.cmn;*pmm and click drop down arrow on Find Now button and choose the Refine - Subtract from Found Items command.
